Quinoa Banana Protein Bar

This is not a sweet recipe, which is one of the things I like about it. There is a subtle banana sweetness, but it really wins because of it’s creamy (thanks to the yoghurt, banana and almond butter) texture, subtle banana and almond flavour, with the added bonus of the rich 85% Lindt chocolate! A great high-protein and healthy fat snack.


  • 1 1/4 cup quinoa flakes
  • 2 scoops vanilla protein powder of choice (I used Julian’s Bakery Vanilla Grass-Fed Beef Protein)
  • 2 bananas
  • 1 egg or flax-egg (1 tbs linseed meal, 3 tbs water)
  • 1/2 cup milk or milk substitute (almond, coconut)
  • 3/4 cup yoghurt – greek, goats or coconut
  • 1/2 cup almond butter
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/4 cup chocolate – Lindt 85%, plus some extra for topping
  • Salt on top


  • Mix in all wet ingredients (egg, milk, yogurt, almond butter, vanilla, mashed bananas).
  • In a separate bowl, mix quinoa flakes, protein powder and cinnamon.
  • Combine dry ingredients and wet ingredients.
  • Chop up 1/4 cup Lindt 85% chocolate and mix through.
  • Pour into 9×13 baking dish.
  • Top with extra chopped Lindt chocolate and salt.
  • Bake at 180c for 20-25 min.
  • Stand to cool. Store in the fridge.
